Café-Style Cheese Scones
Ingredients
2 cups (300 g) plain flour
4 tsp baking powder
½ tsp salt
60 g cold butter
1 ½ cups grated tasty/cheddar cheese
¾–1 cup milk
Optional: ½ tsp mustard powder or a pinch of cayenne
Method
Preheat oven to 200°C.
In a bowl combine flour, baking powder, salt (and mustard powder if using).
Rub in cold butter until it looks like breadcrumbs.
Stir in most of the cheese (reserve a handful for topping).
Add milk gradually and mix gently until a soft dough forms.
Tip onto a lightly floured surface and very gently bring together — don’t overwork.
Pat into a 3–4 cm thick round.
Cut into squares or triangles.
Place on a baking tray, brush lightly with milk, and sprinkle with the remaining cheese.
Bake 12–15 minutes until golden.
Tips for Café-Level Scones
Handle the dough as little as possible (this keeps them fluffy).
High heat gives that nice rise.
Use strong cheddar/tasty cheese for best flavour.
